Sarsaparilla Smurf

Ingredients needed: 2 cups o' water 1¾ cups o' sugar (or substitute) 115g/4 oz dried sarsaparilla root 30g/1 oz dried birch root (optional but good) Just a pinch of salt (optional but helps with the flavor) 5g/1 tsp o' citric acid A bit of Acid Phosphate (optional) (Lemon juice is optional, but Smurfs don't seem to use it.)
Method: In a medium sauce pan over medium heat, bring the water and Sarsaparilla root to a low simmer. Remove the pan from the heat for about 30 or 40 minutes. Strain it through a fine mesh strainer and discard the roots. Add the sugar (and salt) to the liquid; place on the heat stirring until the sugar is dissolved. Take off the heat and stir in citric acid. Add a little Acid Phosphate if you want. Chill your Sarsaparilla in the fridge. Add soda water if you want. And done! Enjoy your Sarsaparilla!
Tip: Putting ice in your sarsaparilla will water it down quickly, so to avoid this you may freeze sarsaparilla liquid into ice cubes and put them in your drink. Enjoy!
