I’m writing a history of the Smurfs, in my own version, but I can’t seem to find a good account of the lore of the Smurfs. In the first live-action movie, a brown book on Smurfs by Peyo is shown. However, I can’t find that anywhere. Can you help?

I believe that the book shown in the movie is not real and was just made up for that scene. Bluebuddies has a page on the History of the Smurfs http://bluebuddies.com/help/smurfs_peyo_biography.htm
But if you're looking for an in-universe history of the species, I don't believe I've seen an official one. I will let you know if I come across one, though.

Is it a pop-up book, Coffee? So far I've only found on Google this picture.
This is the final illustration for the cover of the pop-up book. However the title was changed to "Smurfology" after the artwork was approved.

Smurfs Wiki is a great source of info for smurfy research. I've used it a ton to get information I needed for fanfics!
