I do wonder, though. Wouldn't the fact that he's blue and has no hair be an indicator enough that he's not a Psyche?

In the EMPATH: The Luckiest Smurf story, Empath was basically adopted into the Psyche culture by the Psyche Master, who forcibly took him away from Papa Smurf when he was an infant and then erased every memory Empath had of being a Smurf. As far as how the Psyches treated him, given their culture of individuality being suppressed for the sake of a collective mind, they would have considered him as nothing more than a "prototype" Psyche that the Psyche Master has "created" for some purpose known only to their leader. In other words, any particular differences such as Empath's bald head and blue skin would simply be ignored by the Psyches.
As an interesting aside, the Psyche Master had also identified himself to Papa Smurf as "formerly being a Smurf", which is part of why he never shows himself as anything other than a face appearing in a beam of light in his temple.
